My Favorite Tofu Sandwiches

Crispy, well-seasoned tofu with a flavor that reminds you of chicken, paired with fresh veggies and a sweet-tangy maple mustard sauce. Quick to make and utterly delicious - perfect for a satisfying lunch or dinner!
š½ Serves 2 š 15-20Ā minutes Difficulty: Beginner
Ingredients:
1 block of firm tofu
Marinade:
2 Tbsp soy sauce
1 Tbsp mustard
1 tsp peanut butter
½ tsp maple syrup
¼ onion powder
¼ garlic powder
Breadcrumb mix:
½ cup breadcrumbs
2 Tbsp nutritional yeast
1 Tbsp corn flour
2 Tbsp plain flour
½ tsp salt
½ tsp Italian herbs
½ tsp plant-based chicken stock powder (optional)
Mustard maple syrup sauce:
2 Tbsp Dijon mustard
1 Tbsp maple syrup
3 Tbsp of neutral oil to fry
Vegan butter/vegan mayo
Vegetables of your choice (I used tomatoes, lettuce, yellow capsicum/bell pepper)
Instructions:
Press the tofu.
Prepare the marinade: in a medium bowl, combine all the ingredients for the marinade. Set aside.
Prepare the breadcrumb mix: in a medium bowl, combine all the ingredients for the coating. Set aside.
Cut the tofu in half lengthwise and once again in half widthwise to make 4 thick slices.
Place 2 slices of tofu in the marinade. Flip and make sure they are evenly covered.
In a large frying pan, heat the oil to medium.
Drop the marinated tofu in the breadcrumbs mix, flip to cover evenly and place on a heated frying pan.
Fry until golden, approx. 4-5min on each side. Place on a paper towel to dry it from excess oil.
Repeat with the remaining tofu slices.
In a small bowl, combine mustard and maple syrup to create the sauce.
Assemble the sandwich: toast the bread, spread vegan butter/vegan mayo, place lettuce, breaded tofu, tomatoes, capsicum. Pour the sauce over the sandwich and cover it with a slice of bread.
