This is one of the easiest, yet most satisfying salads I've been enjoying lately. It's wholesome, flavorful, and insanely easy to make. It's fresh, crunchy, creamy, and tangy, takes 15 minutes max and brings so much happiness š¤©
š½ Serves 3 š 15 minutes Difficulty: Beginner
Ingredients:
1 can of 4 bean mix
1/2 red onion
3 tomatoes, sliced
1 red capsicum, chopped
2 avocadoes, chopped
1 cup of microgreens
1 cup vegan parmesan, I used homemade
2-3 Tbsp Balsamic Fusion Vinaigrette
Salt and pepper to taste
Instructions:
Prepare the ingredients, chop all vegetables, drain the tomatoes. Prepare vegan homemade parmesan (if needed).
Place all the ingredients in a large salad bowl.
Pour balsamic fusion vinaigrette and mix until well combined.
Serve chilled and enjoy!
