Oat Tahini and Dates Cookies


Here is how to use the leftover pulp from making oat milk.

It's a beautiful combination of bitterness of the tahini and the sweetness of the dates. If you love tahini and dates you are gonna love these vegan cookies.

Ingredients

  • 1/3-1/2 cup oat pulp (leftover pulp from homemade oat milk) or quick oats

  • ½ cup rolled oats

  • 3/4 cup plain flour

  • 1 tsp baking powder

  • ½ cup brown sugar

  • ½ tsp cinnamon

  • ½ tsp salt


  • 1/3 cup tahini

  • ½ cup oat milk (or other plant-based milk)

  • ½ tsp vanilla essence

  • ½ cup chopped dates

Instructions

  1. Preheat the oven to 180’C. Chop the dates. Prepare all the ingredients.

  2. In a large bowl, place oat pulp, rolled oats, flour, baking powder, brown sugar, cinnamon, salt, oat milk, tahini, vanilla essence and chopped dates. Mix well until combined.

  3. Scoop the cookie dough and place it on a baking tray to the size you wish.

  4. Bake form 12 min.

  5. Remove from the oven and let them cool down.

  6. Enjoy with a glass of homemade oat milk 😉

Notes:

Tahini is a sesame paste. Feel free to sub it for almond, cashew or peanut butter.
