This fresh and cozy Parsley Pesto is quick to make and full of comforting flavors. Spread it on warm toasted sourdough, then top with golden fried mushrooms and juicy cherry tomatoes for a simple, delicious treat that feels like a hug in every bite. 


🍽 Serves 2 🕘 5 minutes Difficulty: Beginner


Ingredients:


  • 2 cups of fresh parsley

  • 1/3 cup olive oil

  • 1/3 cup brazil nuts

  • 2 cloves of garlic

  • ¼ tsp salt

  • pepper

  • juice and zest from ½ lemon


Paired with:


  • sourdough bread

  • cherry tomatoes

  • fried mushrooms



Instructions:


  1. Chop the parsley thoroughly. Peel the garlic.

  2. Place all the ingredients in the blender/food processor and blend to your preference.

  3. Move it to a jar or glass container and add more oil.

  4. In a large frying pan, sprinkle a dash of olive oil. Place sliced mushrooms and fry on both sides until golden.

  5. Toast the bread in a toaster or on a frying pan with a little bit of oil.

  6. Spread the pesto on the bread. Place fried mushrooms and cherry tomatoes. Sprinkle with freshly ground pepper.

  7. Enjoy!
