Peanut Butter Protein Bars

Here is the recipe for my super easy, absolutely delicious and packed with protein peanut butter bars. Yum!

  • 1 ½ cups peanut butter

  • ½ cup chopped almonds

  • ½ cup dates

  • ½ cup cranberries

  • ½ cup cashews

  • ½ cup hemp seeds

  • ¼ cup chia seeds

  • ¼ cup flax seeds

  • ½ tsp vanilla essence

  • 3/4 cup dark chocolate (approx. 100g) @whittakersnz

  • ¼ cup date syrup (optional)

  • ½ cup chopped peanuts

  • Pinch of salt


  1. Prepare the ingredients - chop peanuts, almonds, cashews, dates, and cranberries.

  2. In a food processor, place almonds, dates, cranberries, cashews, hemp seeds, chia seeds, flax seeds, and vanilla essence.

  3. Blend until well combined.

  4. Spread the peanut butter mixture over a baking tray. I like to use baking paper and a glass to even it up. Place in the fridge for the time being.

  5. Melt the chocolate.

  6. Pour date syrup and spread evenly over the peanut butter layer.

  7. Pour 2/3 of melted dark chocolate and spread.

  8. Spread chopped peanuts, and salt and pour the remaining chocolate on top.

  9. Place in the fridge for a few hours to let it set.
