Spanakopita-inspired Tart

Ingredients:


Crust:

  • 1 Tbsp ground flax seeds

  • 3 Tbsp water

  • 1 ½ cups almond meal

  • 1/3 cup hemp hearts @hemp.nz

  • ½ tsp salt

  • ½ tsp turmeric

  • Pinch of pepper

  • 2 Tbsp vegan butter, melted

Filling:

  • 1 tsp extra virgin olive oil

  • 4 cloves of garlic

  • 2 cups of frozen spinach

  • 2 cups of fresh spinach (or 1 more cup of frozen spinach)


  • 1 block of tofu

  • 1/3 cup of plant milk

  • 2 Tbsp chickpea flour

  • 1 tsp onion powder

  • 1 tsp garlic powder

  • 1 tsp ground nutmeg

  • 1 tsp salt

  • ½ tsp pepper

  • 1 Tbsp extra virgin olive oil


  • 1 Tbsp fresh dill, finely chopped

  • 100g of vegan feta or mozzarella - I used @angelfoodcheese - gifted


Instructions:

  1. Prepare the ingredients. In a small bowl whisk ground flax seed with water. Set aside.

  2. In a large mixing bowl, place almond meal, hemp hearts, salt, turmeric, and pepper. Mix until well combined.

  3. Incorporate the flax mixture and melted butter. Shape the dough into a ball and wrap it in a compostable cling wrap (I used @compostic.co gifted). Place it in the fridge for the time being.

  4. Heat a well-oiled frying pan to medium. Add the minced garlic and sauté for 2-3 minutes. Add frozen spinach and fry for approx. 10 minutes – until thawed and the liquid has reduced.

  5. Preheat the oven to 190’C. In the meantime, grease a tart dish with vegan butter, and using your hands, cover the dish with the dough. Pinch the dough with a fork. Bake for 15 minutes.

  6. Once the spinach has reduced all the liquid, reduce the heat to low, add fresh spinach, and place the lid on. Let the spinach wilt. Remove the lid and mix well.

  7. In a food processor, place: tofu, plant milk, chickpea flour, garlic and onion powder, ground nutmeg, salt, and pepper. Blend until very smooth. Add extra-virgin olive oil and mix using a spatula.

  8. Transfer the creamy filling into the pan containing spinach. Add the chopped dill and mix until well combined.

  9. Remove the crust from the oven. Evenly spread the filling. Crumble the cheese on top and place in the oven. Bake for 20 minutes.

  10. Serve & enjoy!
