Finding delicious and satisfying gluten-free bread can be a mission. Fortunately, there is the @glutenfreedom__ range of gluten-free products. I’ve teamed up with them to share with you this insanely satisfying sandwich – The Ultimate Vegan Sandwich! It’s packed with flavours – smoky grilled tofu, red cabbage slaw, pickles and fresh greens. All that packed into soft and delicious @glutenfreedom__ Simply Soft Sourdough – now with an improved recipe and a good source of fibre!


🍽 Makes 3 sandwiches 🕘 20-25 minutes Difficulty: Beginner



Smoky grilled tofu:

  • 1 block of firm tofu

  • Marinade:

  • 2 Tbsp BBQ sauce

  • 2 Tbsp tamari sauce

  • 1 Tbsp maple syrup (optional)

  • 2 Tbsp water

  • ½ tsp of smoky paprika

  • 1 Tbsp of BBQ sauce to apply after grilling

Red cabbage slaw:

  • 1 ½ cups of shredded red cabbage

  • 1 medium carrot, grated

  • 1 Tbsp green onion, chopped

  • 1 Tbsp chopped parsley

  • 2 Tbsp vegan mayo

  • Sliced pickles

  • Lettuce

  • Dijon mustard

  • Vegan mayo



  1. Press the tofu for 10-15 minutes to drain any excess liquid.

  2. Cut the tofu into 0.8-1cm slices and prepare the marinade: in a medium container, whisk BBQ sauce, tamari sauce, maple syrup, water, and smoked paprika.

  3. Place the sliced tofu into the marinade. Place the lid on top of the container and gently shake to make sure the tofu is evenly coated. Set aside for a minimum of 15 minutes (feel free to marinate it in the fridge overnight).

  4. Make the red cabbage slaw: shred and chop the vegetables and herbs. Place them in a medium bowl, add mayo, and mix until well combined.

  5. Grill the tofu slices on medium-high heat for approx. 3-4 minutes on each side (until browning). Brush grilled tofu with more BBQ sauce (optional).

  6. Assemble the sandwich. Prepare the @glutenfreedom__ Simply Soft Sourdough bread according to your preference (fresh or toasted). Spread mayo over the bread slice. Place lettuce, grilled tofu, red cabbage slaw, pickles, and more lettuce. Spread Dijon mustard over the remaining bread slice and place it on top.

  7. Serve and enjoy!
