Vegan Chipotle Portobello Tacos

  • 4 Portobello mushrooms (sliced)

  • 1 red bell pepper (sliced)

  • ½ red onion (sliced)

  • 1 tsp olive oil

Chipotle Marinade

  • 1 tsp olive oil

  • 2 Tbsp chipotle adobo sauce

  • ½ tsp cumin powder

  • ½ tsp sweet paprika

  • 1 clove of garlic (minced)

  • ¼ tsp salt

  • Mashed avocado/ Guacamole

  • Fresh coriander

  • Lettuce

  • Lime juice


  1. Prepare all the ingredients. Slice the mushrooms, bell pepper and onion.

  2. To make the marinade: In a large bowl, combine all the ingredients for the marinade.

  3. Place sliced mushrooms and mix well to cover them evenly. Put the bowl in the fridge and let it marinate for 1h.

  4. Preheat the oven to 190’C. Drain the excess liquid from the mushrooms and place them on a baking tray.

  5. Add bell pepper and onion to the mushrooms and sprinkle with olive oil. Bake for 25 min.

  6. In the meantime, mash the avocado, and prepare fresh coriander, lettuce, and quarters of lime.

  7. Remove the tray from the oven and let it cool for 2-3 min.

  8. Assemble the taco: on a tortilla, place the mushrooms, bell peppers and onions. Top with lettuce, mashed avocado, fresh coriander and sprinkle with lime juice.

  9. Enjoy!
