I have been obsessed with this Vegan Chocolate Mousse lately and I'm sure once you try it, you will be too.
It's so easy to make. Looks beautiful and tastes amazing! Yum!

Ingredients
Aquafaba from 1 can of chickpeas
100g dark chocolate, I used
1/4 tsp vanilla essence
1/4 maple syrup
1/2 cup Greek style coconut yoghurt
2 Tbsp desiccated coconut
1 Tbsp maple syrup
1/2 cup strawberries (chopped)
2 Tbsp dark chocolate (grated)
Vegan butterscotch sauce (optional)
Instructions
Whisk aquafaba using an electric mixer or a stand mixer until it's white and firm with stiff peaks.
Melt chocolate. Add vanilla essence and maple syrup. Let it cool
Chop strawberries.
Add melted chocolate to the aquafaba and stir carefully until well combined. Pour into glasses and place in the fridge for at least 1 hour.
Mix coconut yoghurt with desiccated coconut and maple syrup.
Once the mousse is set, top with coconut yoghurt, strawberries, chocolate and butterscotch sauce.
