Vegan Churro Pancakes!


Happy Pancake Day! Shouldn’t it be the whole week? 😉

If you are anything like me, you are gonna love these churro pancakes! It’s a combination made in heaven! 🥰


Makes 7 pancakes


🍽 Serves 2

🕘 20-25 minutes


Ingredients:

  • 1 cup of plain flour

  • 1 tsp of baking powder

  • 1 ½ Tbsp raw sugar

  • 1 tsp cinnamon powder

  • Pinch of salt


  • 1 cup of plant milk

  • ½ Tbsp apple cider vinegar

  • ½ Tbsp of extra virgin olive oil

  • 1 tsp vanilla extract


Coating:

  • 2 Tbsp raw sugar

  • ½ Tbsp cinnamon


  • 1 Tbsp of vegan butter to fry the pancakes


  • 100g of melted chocolate to serve ( I used @whittakersnz Oat Chocolate)


Instructions:

  1. Mix all dry ingredients: In a large bowl, place the plain flour, baking powder, raw sugar, cinnamon, and salt. Whisk until well combined.

  2. Mix all wet ingredients: In a medium bowl, pour in plant milk and add apple cider vinegar, extra virgin olive oil, and vanilla extract. Whisk to combine.

  3. Pour wet ingredients into the large bowl and combine using a whisk. Do not over-whisk the mixture.

  4. Prepare cinnamon sugar: in a medium bowl, combine raw sugar with cinnamon.

  5. Heat a frying pan to medium. Melt the butter and using a ladle pour the mixture onto the frying pan. Fry for 3-4 minutes (until golden) and flip. Fry for another 2-3 minutes. Place the pancake straight into the bowl and coat it with cinnamon sugar on both sides. Repeat with the remaining pancake mixture.

  6. In the meantime, melt the chocolate.

  7. Serve topped with melted chocolate and enjoy! 💚
