Vegan Quesadillas

Quesadillas are all about the cheese - and this gooey, melty vegan version does not disappoint. Made with tofu, spices, and a bit of chipotle kick, it’s perfectly paired with seasoned beans, crisp veggies, and a golden, pan-fried tortilla. Dip it in smoky BBQ-chipotle sauce and you've got yourself a seriously satisfying meal.
🍽 Serves 2 🕘 30-35 minutes Difficulty: Beginner
Ingredients:
Vegan cheese:
1/2 block firm tofu
1/4 cup nutritional yeast
1/2 tsp onion powder
1/2 tsp garlic powder
1 Tbsp apple cider vinegar
1/4 cup tapioca
1 tsp sea salt
1/2 tsp turmeric powder
1/4 cup warm water
2 Tbsp chipotle sauce (optional) I used La Morena
1 can kidney beans
1/2 tsp cayenne pepper
1/2 tsp sweet paprika
1 tsp dried bell peppers
1 Tbsp cumin powder
1 Tbsp extra virgin olive oil
1/2 red capsicum (chopped)
1/2 yellow capsicum (chopped)
1/2 red onion (chopped)
1 tsp extra virgin olive oil to fry
Tortilla wraps
Chipotle sauce mixed with BBQ sauce to serve
Instructions:
To make the cheese: Place all the ingredients in a food processor/blender and blend until smooth. Pour cheese to a saucepan and heat up constantly stirring. It takes 3-4 min until it thickens and converts into gooey melted cheese.
In a bowl, place beans and all the spices. Mix well until combined.
To make quesadillas: Heat up oil in a large frying pan. Place one tortilla. Fry for 1-2 min and flip. Place cheese, beans, capsicums and red onion on one half of the tortilla. Fold in half (see video) and press to stick together.
