Vegan Zucchini Sweet Potato Fritters

Who can resist these crispy, golden fritters? Packed with fresh veggies and herbs, they’re bursting with flavor and have the perfect crunch. Plus, the homemade tomato dipping sauce takes them to the next level. Trust me, once you try these, they’ll be your new favorite snack or side dish!
🍽 Makes 12 fritters / Serves 3-4 🕘 45-50 minutes Difficulty: Beginner
Ingredients:
3 zucchinis/courgettes
1 sweet potato
1 red onion
3 Tbsp flax seeds
1 Tbsp chia seeds
1/3 cup water
3 Tbsp apple sauce
3 garlic cloves
½ tsp turmeric
½ cup fresh parsley
6 Tbsp flour
Salt, pepper
3 Tbsp olive oil to fry
I love to serve them with this sauce:
Tomato dipping sauce
1 can chopped tomatoes
1 garlic clove (minced)
1 Tbsp oregano
1 tsp basil
Instructions:
Dice the onions and garlic. Grate the zucchini.
Place the zucchini in a bowl. Mix in 1 Tbsp salt.
Move the zucchini onto a tea towel to drain from the water. Squeeze out the excess water. A very important step, so make sure you don't skip it.
Grate sweet potato. Chop fresh herbs.
In a large bowl combine all the ingredients.
Fry on heated oil on both sides until golden.
Let them cool for a few minutes before serving.
