Vegan Date Scones

These tender, buttery vegan scones come together in just 25 minutes - light, flavorful, and studded with sweet chopped dates. Inspired by early mornings in my chef days, when I’d start every shift at 6 a.m. baking scones, pies, and cupcakes alone in the kitchen, this recipe is close to my heart. It’s simple enough for beginners but delivers bakery-quality results. Serve warm with plant-based butter for a nostalgic, cozy treat.
🍽 Makes 8 scones 🕘 25 minutes Difficulty: Beginner
Ingredients:
½ cup of room temperature soy milk
1 Tbsp apple cider vinegar
2 ¼ cups plain flour
1 tsp baking powder
2 Tbsp raw sugar
1 tsp salt
½ tsp cinnamon
½ tsp nutritional yeast
½ cup cold vegan butter
1 1/2 cup of chopped dates
1 Tbsp soy milk – brush before baking
1 tsp raw sugar mixed with ½ tsp cinnamon powder
Instructions:
In a bowl/measuring cup combine plant-based milk and apple cider vinegar.
Prepare all the ingredients. Chop dates. Preheat the oven to 200’C.
In a large bowl, sift the flour and add baking powder, salt, sugar, cinnamon, and nutritional yeast. Mix well.
Add small pieces of cold butter and combine the two with your fingers (see the video).
Pour the milk into the large bowl and mix. Add dates and combine.
Spread some flour on the surface. Place the dough and shape it into a circle. Cut into 8 pieces.
Place the scones on a baking tray. Brush with soy sauce and sprinkle cinnamon sugar on top.
Bake for 14 min.
Remove from the oven and let them cool down.
Serve with some plant-based butter.
